Peach, Burrata Summer salad

Summer is upon us! And what says summer like stone fruit season. Our family is obsessed with peaches and nectarines, and it is always a treat when we see them start to pop up at our local market. In the last few weeks I’ve found a peach and burrata salad that has quenched my taste buds like no other. I’ve since tested it with 2 separate groups of friends and both have raved about it. So I assumed it would be a safe bet to share here. 

The official recipe link that I used is linked here…however I’ve now taken a few liberties to simplify it when time is of the essence and here is the result… 

  • find a nice flat large serving dish (preferably with rounded edges to catch all the dressing that overflows) 

  • cut your peaches in slices and scatter around the dish

  • take your other hero…cherries and de-pit and cut into segments and scatter throughout the gaps of the peaches 

  • repeat the above step with cherry chopped tomatoes

  • find a nice, fresh burrata (we get ours at our local farmers market, but you can typically find it near the mozzarella at the grocery store) 

  • break open the burrata in the center of the peach/cherry/tomato mixture and plot on top, this is incredibly satisfying if I say so myself, most definitely my favorite bit. 

  • If you have the time…make the balsamic dressing linked in the recipe above. otherwise in a pinch, drizzle some fresh evoo and balsamic over the top with a fresh crack of salt and pepper.

  • enjoy the creamy richness of every bite! 

Ideally if you’d really like to impress your friends find some fresh basil or mint and scatter the leafs over the top for garnish. It not only tastes amazing but it definitely looks even better.
